Prepare the pepper. Cut the sweet pepper in half, remove the seeds, and place cut-side down on a baking sheet. Roast at 220°C for about 12–15 minutes until soft and the skin is nicely browned in spots. Cool slightly and cut into strips.

Prepare the couscous. Pour the couscous into a bowl, add 0.7 g of salt and pour about 60 ml of boiling water over it. Cover and leave for 5 minutes. Then fluff with a fork.

Prepare the beef. Slice the beef crosswise into thin strips. Thinly slice the shallot into half rings, finely chop the garlic.

Sear the beef. Heat a non-stick pan well with 4 g of olive oil. Spread the beef in one layer, add 1 g of salt, ground black pepper, and smoked paprika. Sear over high heat for about 2–3 minutes, turning occasionally, until a golden crust forms but the meat is not dried out.

In the same pan, add the remaining 2 g of olive oil and shallot. Sauté for about 1–2 minutes. Add garlic and heat for another 20–30 seconds.

Add the roasted pepper and cooked couscous to the pan. Add 0.8 g of salt, half of the lemon juice, and most of the finely chopped parsley. Gently mix and heat for about 1 minute.

Add the beef. Return the beef along with its juices to the couscous. Mix and heat together for another 30 seconds. Remove from heat and add the remaining lemon juice.

Place the couscous with roasted pepper on a plate, naturally distribute the strips of beef over and between the grains. Sprinkle with the remaining fresh parsley and, if desired, add a little freshly ground black pepper.
